PREHEAT oven to 350°F. Line baking sheet with parchment. Break off 12 cookies, place on baking sheet and bake according to package directions. Transfer to wire rack to cool completely. Refrigerate remaining dough for a later use.
PULSE cooled cookies in food processor until they are fine crumbs. Transfer to small bowl.
SIMMER cream in a small saucepan. Remove from heat, add 1/4 cup NESTLÉ® TOLL HOUSE® Premier White Morsels and stir until melted. Cool to room temperature, then add to bowl with cookie crumbs and mix well. Shape into 12 balls and refrigerate.
MELT remaining 3 3/4 cups white morsels and shortening in medium, uncovered, microwave-safe bowl on HIGH (100%) power for 30 seconds STIR. Morsels may retain some of their shape. If necessary, microwave at additional 5 to 10-second intervals, stirring just until melted. Alternatively, place the morsels and shortening in a small bowl set over, not in, a pan of hot water, stirring once the morsels start to lose their shape. Cool to room temperature.
DIVIDE melted morsels into 3 bowls and use oil or powder based food coloring to tint the morsels pink, blue and yellow.
DIP lollipop sticks about 1/2-inch into melted white morsel mixture, then into cookie balls. Refrigerate while you prepare bunnies.
PIPE out silhouettes of 12 bunnies in assorted colors using the template. Let set.
Holding onto lollipop stick, dip each pop into your choice of colored morsel mixture until coated. Before your pops set, remove a corresponding colored bunny from the template sheet and press onto the back of each round pop so the cookie ball becomes the bunny's "bottom". Add a white candy ball to the front to create a small white bunny tail.
