Homemade Corn Fritters

Homemade fried corn fritters just like my Mama use to make. Eat just like they are or drizzle with syrup for a delicious treat.

Homemade Corn Fritters

Ingredients

  • 3/4 cup yellow cornmeal
  • 3/4 cup all purpose flour
  • 1 1/2 teaspoons baking powder
  • 3/4 teaspoons baking soda
  • 1 1/2 teaspoons sugar
  • 1/2 teaspoon salt
  • 3/4 cup buttermilk
  • 2 eggs whipped
  • oil for frying

Instructions

  1. Heat oil in a large dutch oven over medium/high heat.
  2. In a bowl, combine the cornmeal, flour, baking powder, baking soda, sugar and salt. Whisk to evenly combined.
  3. In a small bowl, whisk together the buttermilk and eggs.
  4. Add to the dry ingredients and stir until just coming together but a few flour streaks remain.
  5. Once the oil is hot, use a 1/4 cup measuring cup to drop the batter into the hot oil.
  6. Fry to a golden brown.
  7. Transfer to a paper towel lined plate and then into a basket or bowl.
  8. Serve immediately.
