Homemade Mayonnaise

Ingredients

  • 2 fresh egg yolks
  • 2 Tablespoons red wine vinegar
  • 1 Tablespoons lemon juice
  • 2 teaspoon Dijon mustard
  • 1 teaspoon salt
  • 3 cloves of garlic crushed optional
  • 2 pinches of sugar
  • black pepper to taste
  • 2 cups of canola oil

Instructions

  1. Mix well the eggs, vinegar, lemon, garlic, sugar and mustard.
  2. Add the canola oil in a slow stream until it has all mixed well
  3. Add the salt and pepper to taste
  4. If it is very thick add a tablespoon or 2 of warm water to thin it down.
  5. Store in a sterilized jar in the fridge until you need it.
  6. **It does not have any preservatives so will not last as long as store bought!
