No Guilt Chocolate Pudding

Ingredients

  • 2 cups pitted dates
  • 2 cups almond milk
  • 1 tablespoon chia seeds
  • 8 tablespoons cacao powder
  • 1/4 cup cashew butter
  • 1/2 teaspoon sea salt
  • 1 1/2 teaspoons vanilla extract

Instructions

  1. Soak the dates and almond milk together in a bowl for 3 hours.
  2. Transfer to a high-speed blender and blend on high until creamy.
  3. Add in the chia seeds, cocoa powder, cashew butter, salt, and vanilla and blend until well mixed. Pour into small dishes or your favorite pie crust and top with nuts and berries, or other fruit as desired.
