Parmesan Garlic Cauliflower Mash

Ingredients

  • 1 head of cauliflower 5-6 cups, cut into 1-2 inch florets
  • 2 cups chicken/vegetable stock or water & bouillon
  • 4 cloves of garlic peeled and smashed open with the side of a chef’s knife
  • 1 tsp coarse sea salt
  • 1/4 cup olive oil
  • Fresh ground black pepper to taste
  • 1/2 cup shredded Parmesan cheese
  • 3 green onions chopped

Instructions

  1. in a large sauce pot, place cauliflower, garlic cloves, chicken stock (or water & bouillon), and sea salt.
  2. Cover and bring to a boil, then reduce heat and simmer for 12-15 minutes (until tender), stirring occasionally.
  3. Drain cauliflower in a strainer and press out as much liquid as possible before transferring into the food processor.
  4. Pureé in food processor until smooth.
  5. With motor running, add olive oil, pepper, cheese and green onion.
  6. Adjust seasoning to taste.
