Rosemary Potatoes

Ingredients

  • 3 pounds potatoes I used 2 bags small red and 1 bag new potatoes
  • .66 oz package fresh rosemary
  • 5 cloves garlic minced
  • Sea salt and fresh ground pepper to taste
  • 3 tablespoons olive oil

Instructions

  1. In a large sauté pan, heat oil over medium heat.
  2. Add potatoes, rosemary, garlic, salt and pepper.
  3. Reduce heat, cover and simmer for 1 hour or until potatoes are soft and easy to pierce with a fork. Stir a few times.
  4. Let rest for 15 minutes before serving.
