My family loves these tomato baked potatoes. A great dish to take to a party.

Tomato Baked Potatoes

Ingredients

  • 4 whole Golden Potatoes
  • 2 Tomatoes diced
  • 4 Tablespoons Butter
  • teaspoons Garlic Powder
  • ¼ teaspoons Kosher Salt
  • 2 teaspoons Olive Oil
  • Parsley for garnish optional
  • 1/2 cup heavy cream

Instructions

  1. Preheat oven to 400ºF
  2. Peel potatoes
  3. Slice potatoes until almost all the way through
  4. Place in baking dish
  5. Slice the butter into very thin pieces and place between potato slices
  6. Place the diced tomatoes between the potato slices
  7. Season the potato with garlic powder and kosher salt.
  8. Sprinkle with parsley (optional)
  9. Drizzle the potato with olive oil.
  10. Bake at 400ºF for 45 minutes.
  11. Remove from the oven and drizzle heavy cream over the potatoes.
  12. Place back in the oven for 10-12 more minutes.
  13. Remove and serve!
