A breakfast casserole with a blend of spinach, eggs, sausage, cheese and tomato juice.

Tomato Egg Breakfast Casserole

Ingredients

  • 1/2 lb . sausage I like Jimmy Deans, chopped
  • 1/2 C . chopped onion
  • 3 oz . fresh baby spinach
  • 6 large eggs
  • 1/2 C . tomato jucie
  • 2 T . all purpose flour
  • 1/4 tsp . mustard powder
  • 1/4 tsp . salt
  • 1/4 tsp . pepper
  • 1 C . shredded aged white cheddar or regular sharp cheddar
  • 1/2 C . shredded swiss cheese

Instructions

  1. Brown the sausage in a skillet, remove and drain off all but 1 T. of the grease.
  2. Add in the onion and spinach and cook until the spinach has wilted.
  3. Remove from the heat and set aside.
  4. In a mixing bowl whisk together the eggs, tomato juice, flour and seasonings.
  5. Stir in the spinach/onion mixture, the sausage and the cheeses.
  6. Combine well and pour into a lightly greased 9x9 pan. Bake in a 350 degree oven for 30 minutes.
